I came across a recipe online for Bolognese Meat Sauce that I wanted to make for dinner the other night. Was just a capture of a page in a book, but I had never made Bolognese before. Was highly regarded as a local recipe of Emilia Romagna in Italy. After trying it, I highly recommend this:

Ingredients
- 2 oz Butter
- 2 Tablespoons Olive Oil extra virgin
- 1 Medium Onion Finely Chopped
- 1 Medium Carrot Finely Chopped
- 1 Stalk Celery Finely Chopped
- 1 oz Mushrooms Diced
- 4 oz Pancetta or Unsalted Bacon Finely Chopped
- 12 oz Ground Beef Pork, or Veal
- 1 Cup Red Wine
- Salt and Pepper to taste
- 4 Tablespoons Tomato Paste
- 1 Cup Meat Stock
- 5 fl oz Heavy Cream
Instructions
- Heat the butter and oil in a deep saucepan
- Add the vegetables and fry until softened and browned
- Add the pancetta and meat until the meat changes color
- Moisten with Wine, Simmer until it evaporates, then add seasoning, tomato paste, and some stock
- Cook slowly, covered, stirring occasionally, and gradually stirring in all the stock
- After 1 1/2 hours, stir in the cream and cook uncovered until reduced.
- Serve with tagliatelle
