I needed a casserole to make this past weekend and wanted to find a dessert equivalent. Thanks to Spend With Pennies this was the perfect solution. Inspired by the Chips Ahoy Icebox Cake recipe, I threw in some simple blue food coloring that reminded me of the Cookie Monster.
