Cookie Monster Casserole
I needed a casserole to make this past weekend and wanted to find a dessert equivalent. Thanks to Spend With Pennies this was the perfect solution. Inspired by the Chips Ahoy Icebox Cake recipe, I threw in some simple blue food coloring that reminded me of the Cookie Monster. It was super easy and delicious, would definitely want to make it again in the future.

Cookie Monster Casserole
Super easy and delicious solution for a casserole party or dessert
Ingredients
- 1 Party pack size Chips Ahoy cookies
- 4 cups Heavy Cream
- 3 tablespoons Sugar
- 1 teaspoon Vanilla
- 10 – 20 drops Blue food coloring/dye
Instructions
- Place cold cream, sugar, vanilla, and blue food coloring in a large bowl.
- Beat on high until stiff peaks form, set aside.
- Lay cookies out to cover the bottom of a casserole dish.
- Spread 1/3 of the whipped cream on top of the cookie layer.
- Repeat two more times finishing with a layer of whipped cream.
- Crush remaining cookies and sprinkle on top of cake.
- Cover and refrigerate for 6 hours or overnight, this helps soften the Chips Ahoy cookies.
